Everything you need

Main

  • 500 g pork, diced.
  • 1 large white onion, sliced into strands
  • A glug of sesame oil
  • 2 tablespoon Chinese rice wine
  • 1 tablespoon honey
  • 1.5 teaspoon grated/pureed ginger
  • 2 teaspoon five spice
  • Black pepper, to taste
  • 2.5 cm stick cinnamon
  • 1 clove garlic
  • 2 tablespoon grated ginger
  • 2 tablespoon five spice
  • 1 clove garlic
  • 1 dried tangerine peel

Marinade

  • 2 tablespoon dark soy sauce
  • 2 tablespoon sweet soy sauce

Method

1

Step 1

Add your pork to a bowl and pour the soy sauces over. Leave to marinate for an hour or two.

2

Step 2

Heat your oven to 160°C.

3

Step 3

On the hob in a large pot, heat up a good glug of sesame oil and, once hot, add the onions. When tender but not fully softened, add the pork.

4

Step 4

As the pork fries, add the five spice, garlic, ginger, honey, and black pepper.

5

Step 5

Once the pork is cooked, add the rice wine and a cup of water along with the clove, tangerine peel, and cinnamon. Let it simmer for 5 minutes.

6

Step 6

Place the pot in the oven and let it caramelise and reduce down for 40 minutes.

7

Step 7

Remove the cinnamon, tangerine peel, and clove, and serve your stew with rice and pak choi.
