Instructions
Cut the chicken into thin strips. In a bowl, marinate with soy sauce, sesame oil, garlic paste, sugar, and pepper for 10-15 minutes.
Add the egg white and coat the chicken with corn starch; shake off any excess.
Deep fry the chicken in pre-heated oil at 350°F for 1-2 minutes until light brown. Remove and let rest for 4-5 minutes, then fry again for another 2-3 minutes until crispy golden.
In a wok or pan, heat 2 teaspoons oil and quickly sauté the chopped garlic. Pour in the chilli sauce mixture and stir briefly.
Return the fried chicken to the wok, tossing to coat evenly with the sauce.
Turn off the heat, sprinkle the fresh chilli slices and spring onions, then serve immediately.
