Assembly

  • fresh rice paper
  • 10 medium sized lettuce leaves, sliced
  • chopped fresh herbs – coriander, Vietnamese mint & Vietnamese basil

Pan/Wok Mixture

  • 100 grams shrimp
  • 1 teaspoon vegetable oil
  • 1 pinch sugar & salt

Salad Pickle Mixture

  • 0.5 cup grated green papaya (or green mango, bean sprouts)
  • 0.5 cup grated carrot
  • 0.5 teaspoon finely chopped ginger
  • 2 teaspoons white vinegar or lime juice
  • 1 pinch sugar & salt

COOKING STEPS

Pour vegetable oil into a wok (medium heat); add shrimp, 1 pinch of salt & sugar, and cook for 1 minute.

In a separate bowl add the salad mixture ingredients, mixing well. Let sit while preparing the fresh rice paper.

Assemble rolls by layering lettuce, herbs, salad mixture, and shrimp onto rice paper, then roll tightly.
