Honey Soy Chicken Stir Fry

- 500 g Chicken breast or thigh fillets
- 1 Large carrot, thinly sliced
- 2 cup Broccoli florets, halved
- 1 cup Red capsicum, cut into strips
- 4 Green onions, sliced
- 3 cloves Garlic, crushed
Sauce
- 0.3 cup soy sauce
- 2 teaspoon Cornflour
- 0.25 cup water
- 0.3 cup honey
- 1 tablespoon grated ginger
Method
Step 1
Place cornflour in a jug. Gradually blend with water. Add soy sauce, honey, and ginger, and stir to combine. Set aside.
Step 2
To cook the rice, massage the pouch to separate the grains and microwave according to the package instructions. Set aside.
Step 3
Heat oil in a large non-stick frying pan or wok over high heat. Add chicken and stir-fry for 2 minutes. Reduce the heat slightly, then add carrot, broccoli, and capsicum; stir-fry for another 3 minutes. Finally, add green onions and garlic and stir-fry for an additional minute.
Step 4
Stir the honey soy mixture from Step 1, then add it to the frying pan. Simmer for 2 minutes, stirring until the chicken is cooked through and the vegetables are tender-crisp. Serve with rice and garnish with extra green onions.
