Main Ingredients

  • 150 grams chicken breast, skin off and sliced
  • 1 lemongrass stalk, chopped
  • 0.5 clove garlic, chopped
  • 0.5 small shallot, chopped
  • 1 chilli, sliced
  • 2 teaspoons salt
  • 1 teaspoon sugar
  • 1 pinch black pepper
  • 1.5 tablespoons fish sauce
  • 1 spring onion, sliced
  • 1 tablespoon vegetable oil
  • 1 egg (yolk & white), beaten
  • 1 bowl water
  • 1 layer onion, diced
  • 1 tomato with seeds
  • 0.5 teaspoon turmeric
  • 0.5 teaspoon five spice (optional)

COOKING STEPS

Finely chop lemongrass, garlic, shallot, and chilli.

Slice green onion and set aside for later use.

Marinate chicken with lemongrass, garlic, shallot, chilli, pepper, sugar, salt, fish sauce, and five spice.

Heat clay pot with oil. Add turmeric and stir on low heat.

When oil is hot, add chicken and sauté for 2 minutes.

Add egg while stirring for 30 seconds to coat the chicken.

Add water and bring to a boil then add diced onion and tomato.

Place lid onto clay pot and simmer for 10 minutes.

Add sliced green onions and serve.
