Mince 4 cloves of garlic.
Chop the green onions: dice the stems, cut the leafy parts into 2-inch sections (keep separate).
Slice half an onion and cut cabbage into 1-inch thick strips.
Separate onion and cabbage layers for easier stir frying.

Peel and devein shrimp, rinse with cold water, and pat dry.
Marinate with salt, sugar, white pepper, and cornstarch.
Mix evenly, then add a touch of sesame oil.

Boil water in a pot.
Add frozen udon noodles directly (no need to thaw).
Cook until loosened and hot, then remove from water (do not overcook).

Heat oil in a pan over medium-high heat.
Add a pinch of sugar and salt to the oil.
Add sliced onion and cabbage, stir fry for 1 minute.
Season with a splash of dark soy sauce, toss, then remove from pan.

Add more oil if needed, then fry the chopped green onion stems until fragrant.
Add shrimp and pan fry until golden on both sides.
Splash with dark soy sauce, toss evenly, then remove from pan.

Add garlic to the pan and sauté briefly.
Add udon noodles and stir fry until heated through.
Season with soy sauce, dark soy sauce, and a little sugar.
Add a splash of water, cover, and steam for 1 minute.
