Instructions
Slice the chicken (try not to slice too thin).
Dust with 1 teaspoon cornflour and massage well to coat.
In a bowl, combine 1 tablespoon soy sauce, 2 tablespoons mirin, 2 tablespoons sake, and 2 teaspoons sugar. Set aside.
Preheat medium-high oil in a pan. Fry the chicken for 2 minutes on one side.
Flip and fry for another 2 minutes.
Pour the prepared teriyaki sauce over the chicken and cook for 2-3 minutes until the sauce thickens and evenly coats the chicken.
Serve the chicken over rice and garnish with 1/2 tomato and a mixed salad.
